A delicious pizza I made for my brother and his friends during a football weekend. I also wanted to use a new baking stone. Using a cookie sheet is how I've made pizza before. A pizza stone is new to me. I thought it turned out well for the first time making.

Spicy

Pre-cook the sliced potatoes with spices in a large covered skillet with 2 cups of water. Cook on medium-high heat until potatoes are tender.

How To Make Boston Style Pizza

Remove lid and simmer until liquid is no longer present. Add about 1 teaspoon of cooking oil; toss potatoes so they don’t stick to skillet.

In a bowl, mix sour cream and diced jalapeno together. This is an optional step since the cayenne pepper should give this pizza recipe the spiciness already. The diced jalapeno gives it a little bit more kick.

Bake in a preheated 400 degree oven for 20 to 25 minutes. Before cutting, allow the pizza to sit for about 5 to ten minutes.

Also, don't make the same mistake that I made by first assembling the pizza on a baking stone, then having to carefully remove the pizza and setting it aside while preheating the baking stone properly. That took another half hour or so. I'll know better next time.

Making this pizza seems like it's a lot of work than, say, something made with a slow cooker. But it's worth it.

This spicy perogy pizza is perfect for football season eating or just about any time of year. Perogies meet pizza and it’s very, very good!

This perogy pizza is inspired by one served at Canadian chain restaurant Boston Pizza. It starts, as always, with my favourite homemade pizza dough. It’s Jim Lahey’s No Knead pizza dough (just search for it) and you can follow that recipe and great instructions on how to make it. You can, of course, use your favourite homemade or store-made/bought pizza dough.

On top of the dough is a layer of sour cream. You might think you’re going to miss pizza sauce, but trust me, you won’t. If you like, you can serve this with a bowl of pizza sauce or marinara for dipping.

Potatoes – As for the potatoes, be sure to use a baking (Russet) potato, for best results. The potato slices are pre-cooked for a short time in a hot oven. It’s important that they be tender before they go on the pizza, as they won’t cook much more in the short time the pizza is in the oven. I used a mandolin to slice them thinly, but a steady hand and a sharp knife always works as well. You may need to extend the oven time if your slices are thicker.

Jalapeños – The spicy part of this pizza is supplied by jalapeño peppers, that are roasted off with the potato slices. Feel free to adjust the amount according to your spicy tolerance.

Be sure to adjust the amount of potatoes, based on your crust thickness. I like this pizza with a somewhat thin crust, so a generous single (over-lapping) layer of potatoes is fine. If your crust is thicker, add more potatoes, to keep the crust/potato ratio in order.

After that he partnered up with investor Don Spence. They then went out and purchased the Boston Pizza Franchise rights in British Columbia only, except one owned by Ron Coyle in Vancouver and one in Edmonton.

It’s Ron Coyle who started up Boston Pizza from the get-go, in Edmonton, Alberta, downtown on Jasper Ave in 1963. Back then it was called Boston Pizza Spaghetti House. Ron named his pizza restaurant Boston Pizza Spaghetti House, because ( back then) Edmonton didn’t have its own hockey team. Apparently, it was a Boston fan, so he decided to name his restaurant after his favourite hockey team, Boston Bruins. He knew the sports minded Edmontonians would come to his restaurant to watch the game.

Spicy Perogy Pizza

In 1968, while still with the RCMP, Treliving noticed the growing popularity of Boston Pizza and purchased the rights to open a restaurant in Penticton, British Columbia. With the help of investor Don Spencer, he was able to purchase the B.C. Franchise for 3 million dollars at first.

During that same year, the headquarters of Boston Pizza was moved from Edmonton, Alberta to Richmond, British Columbia where it is found today.

While in Penticton, he met George Melville, a chartered accountant. Melville acted as Treliving’s business consultant for four years until 1973, at which time he too became Treliving’s partner in the business.

The two then invested in 15 of their restaurants to begin the franchisees, converted one restaurant to a corporate training restaurant. By 1995 the chain had grown to 95 restaurants in Western Canada with sales in excess of $110 million (CAD)

So – it looks like Jim Treliving had investor help from the very start, in order to buy this large investment from Ron Coyle. I believe that’s why Jim helps out other start-up businesses as an investor on the Canadian Program “ Dragons Den”. It’s a similar to the American show “Dragons Den”.

Jim Treliving now lives in Texas as he still monitors his Boston Pizza Franchise with his friend George Melville. The main office of the Boston Pizza franchise still resides in Vancouver, B.C.

TIP : To find this nice warm area, what I do is turn on my oven to 190 degrees F and leave a small crack of the oven door open. Boston Pizza uses cactus-cut potatoes on their pizza and there are several ways to cook them (boiled, fried, baked, in the air fryer) but making them quickly in the microwave made the most sense to me. Then they finish cooking on the pizza in the oven.

You will need to build it in the app to see how many points it is on your plan. I get potatoes (0 points) so it's lower on my plan.

Then I don't have to worry about transferring it. I also use a perforated pizza pan(affiliate link)-this is the trick to crispy pizza dough!
