Boston Pizza Perogy Pizza Recipe

A delicious pizza I made for my brother and his friends during a football weekend. I also wanted to use a new baking stone. Using a cookie sheet is how I've made pizza before. A pizza stone is new to me. I thought it turned out well for the first time making.

Pre-cook the sliced potatoes with spices in a large covered skillet with 2 cups of water. Cook on medium-high heat until potatoes are tender.

Remove lid and simmer until liquid is no longer present. Add about 1 teaspoon of cooking oil; toss potatoes so they don’t stick to skillet.

In a bowl, mix sour cream and diced jalapeno together. This is an optional step since the cayenne pepper should give this pizza recipe the spiciness already. The diced jalapeno gives it a little bit more kick.

Bake in a preheated 400 degree oven for 20 to 25 minutes. Before cutting, allow the pizza to sit for about 5 to ten minutes.

Also, don't make the same mistake that I made by first assembling the pizza on a baking stone, then having to carefully remove the pizza and setting it aside while preheating the baking stone properly. That took another half hour or so. I'll know better next time.

Making this pizza seems like it's a lot of work than, say, something made with a slow cooker. But it's worth it.

This was inspired by the fact that I love perogies! And being Ukrainian, I have made perogies into a number of other dishes: Loaded Pierogi Soup, Perogy Zucchini Boats, Perogy Potato Salad (Award-winning), Easy Pierogi Stuffed Mushrooms, and Pierogi Breakfast Casserole. And since I also LOVE pizza, this was the perfect recipe! This pierogi pizza is ideal for your next game day (you'll want to have it during football season) or Friday night pizza night!

Boston Pizza uses cactus-cut potatoes on their pizza and there are several ways to cook them (boiled, fried, baked, in the air fryer) but making them quickly in the microwave made the most sense to me. Then they finish cooking on the pizza in the oven.

This Spicy Pierogi Pizza recipe makes 10 servings (slices). However, you can half, double or triple the recipe by clicking on theblueserving number and selecting the number of servings you'd like. The ingredient quantities will automatically adjust. You will just need additional pizza pans

Vegan Spicy Pierogi Pizza

This recipe is Weight Watchers friendlier using WW 2 ingredient pizza dough, turkey bacon, low-fat or fat-free cheddar cheese, partly skimmed mozzarella and sour cream. You will need to build it in the app to see how many points it is on your plan. I get potatoes (0 points) so it's lower on my plan.

You'll need a (14 inch) large round pizza pan for this recipe. I also like to roll my pizza dough right out onto the pan using this siliconepastry/pizza rolling pin(affiliate link). Then I don't have to worry about transferring it. I also use a perforated pizza pan(affiliate link)-this is the trick to crispy pizza dough!

Another way to keep pizza crispy, is to bake it in acast iron frying pan(affiliate link), as well as a pizza stone.

Store this pizza in an airtight container in the fridge for up to 4 days. You could also freeze it whole (after it's cooked) or freeze leftovers for up to 3 months

For this homemade perogy pizza, I use pre-cooked bacon from Costco as it's quicker and less mess! You simply heat it up in the microwave for a few minutes, then remove the fat with a paper towel and chop it up!

Boston Pizza's Spicy Perogy Pizza Copycat Recipe

This perogy pizza is inspired by one served at Canadian chain restaurant Boston Pizza. It starts, as always, with my favourite homemade pizza dough. It’s Jim Lahey’s No Knead pizza dough (just search for it) and you can follow that recipe and great instructions on how to make it. You can, of course, use your favourite homemade or store-made/bought pizza dough.

On top of the dough is a layer of sour cream. You might think you’re going to miss pizza sauce, but trust me, you won’t. If you like, you can serve this with a bowl of pizza sauce or marinara for dipping.

Potatoes – As for the potatoes, be sure to use a baking (Russet) potato, for best results. The potato slices are pre-cooked for a short time in a hot oven. It’s important that they be tender before they go on the pizza, as they won’t cook much more in the short time the pizza is in the oven. I used a mandolin to slice them thinly, but a steady hand and a sharp knife always works as well. You may need to extend the oven time if your slices are thicker.

Jalapeños – The spicy part of this pizza is supplied by jalapeño peppers, that are roasted off with the potato slices. Feel free to adjust the amount according to your spicy tolerance.

Be sure to adjust the amount of potatoes, based on your crust thickness. I like this pizza with a somewhat thin crust, so a generous single (over-lapping) layer of potatoes is fine. If your crust is thicker, add more potatoes, to keep the crust/potato ratio in order.
