This Mexican pizza recipe features creamy refried beans, spicy jalapeño, and sweet corn. The perfect dish for when you can’t decide between Italian and Mexican food!

Since two of our favorite styles to cook areItalianandMexican, the idea of combining them into one Mexican pizza recipe was instantly appealing!Pizza makingis very near and dear to our hearts, but we hadn’t ever ventured out of the realm of traditional Mediterranean toppings. Well, we may have to more often, because this version instantly became one of our new favorites! Somehow the flavors melded into a wonderful blend of Mexican goodness, without tasting like a burrito. (It tasted more like…pizza. Well, Mexican pizza.)I loved the spicy kick of the jalapeños and onions, and the use of Monterrey jack and cheddar instead of the typical mozzarella. The quantities in this Mexican pizza recipe are approximate and can be customized to your liking (especially if you love spice and need more jalapeño!).

When prepping the toppings for this pizza, be extra careful when handling the jalapeño. Even if you wash your hands immediately after cutting the pepper, there will be residual juice left on your fingers that you can’t see or feel. To be safe, don’t touch your face or eyes for at least 30 minutes afterwards to avoid irritation (trust me, I’ve rubbed my eyes one too many times after cutting a jalapeño. It’s never fun!).

Vegetarian Mexican Pizza Recipe

If you think you’ll have leftovers of this Mexican pizza recipe that you’ll want to freeze, either omit the tomato altogether or pick off the tomato before freezing. I know that sounds a little odd, but tomatoes are the one pizza topping that doesn’t freeze well. Frozen tomatoes go a bit grainy in the freezer and never taste good reheated! The rest of this pizza will freeze and reheat nicely. To freeze pizza leftovers, simply let the pizza cool to room temperature before sealing in a freezer-safe container or baggie. When you’re ready to enjoy a slice of this Mexican pizza, pop it into the oven until heated through!

I love everything about tacos and I also love everything about pizza! So when I first heard about Mexican pizza I knew it was quickly going to become a favorite meal of mine.

Mexican Pizza Recipe| Taco Bell Copycat

When it comes to Taco night I like having a few different go to recipes and Mexican pizza is a fun way to change up your Taco night. We make everything from Fish Tacos to Street Corn Tacos and even Buffalo Chicken Fajitas!

Mexican Pizza is a cross between a quesadilla and a pizza. The first layer is a tortilla that is topped with refried beans, taco seasoned ground beef and shredded cheese. The cheese acts as the binder sticking the bottom and top layers together.

The pizza is then topped with another tortilla, a layer of enchilada or taco sauce and more shredded cheese. Air fried, baked or pan fried until the cheese melts and the tortillas are crispy.

Mexican Pizza Recipe (better Than Taco Bell)

Mexican Pizza can be topped with any of your favorite taco toppings. The classics are diced tomato, red onion, sour cream, olives and green onions!

1 In a large frying pan or skillet on medium heat add the ground beef. Use a spatula or spoon to break up the meat into small pieces as it cooks. Sauté for about 5-8 minutes or until the meat is cooked through. Remove grease from the pan.

1 To assemble the pizzas, spread a layer of refried beans on one tortilla. Then top with ground beef. Add a layer of cheese and top with another tortilla.

How To Make The Best Copycat Taco Bell Mexican Pizza

1 Spread 1 tbsp of enchilada sauce on top of the tortilla and top with shredded cheese to evenly cover the top.

Preheat Air Fryer to 400°F. Working in batches (my air fryer fits one pizza at a time) carefully place the pizza in the air fryer and cook for about 5 minutes, or until the cheese melts and the tortillas are crispy. Repeat with remaining pizzas.

Preheat oven to 350°F. Line a sheet pan with tin foil or parchment paper for easier clean up (optional). Arrange the pizzas on the sheet pan leaving a space between them. Bake for 8-10 minutes or until the cheese is melted and the tortillas are crispy.

Copycat Taco Bell Mexican Pizza Recipe

In a large frying pan with a lid, on medium heat add a splash of oil to coat the pan. Add one pizza at a time and cover with the lid. Cook for 4-5 minutes or until the cheese melts and the bottom tortilla is crispy.

Transfer the cooked pizzas to a serving plate and top with the optional garnishes – tomatoes, red onion, olives, sour cream, and green onion. Serve and enjoy!

How To Make Homemade Copy Cat Taco Bell Mexican Pizza

No. It is totally an American invention for American consumers. Not that anything Taco Bell makes is truly Mexican, but ya know, we like it.

Yes. You can make this is big or small as you’d like. You can use street taco sized tortillas or burrito size tortillas. You can also purchase the Azteca shells that you would use for taco bowls and bake those. They are pretty large and are great to serve more people.

Yes. The Taco Bell version uses a sauce that is similar to enchilada sauce with lots of diced tomatoes in it. We don’t have a similar sauce like that you can buy at the grocery store so the closest I have found is enchilada sauce. You could certainly mix the enchilada sauce with half a can of drained diced tomatoes to get it close to the Taco Bell version.

No. I love how crispy it makes the shells but you could bake them or put them in the air fryer until crispy.

The leftovers can be stored in an airtight container for up to 2 days. You can reheat in an air fryer, toaster oven or in the microwave. This can also be frozen. Wrap with plastic wrap then in aluminum foil. It will keep in the freezer for up to 2 months. Let it defrost in the refrigerator then re-heat.

Preheat oven to 400F degrees. In a large skillet, brown and crumble ground beef. Drain excess grease. Place beef back into skillet. Add taco seasoning packet, water and stir. Bring to a boil, then reduce heat and cook until thickened.

In a large skillet, heat up oil over medium heat. Make sure the oil is nice and hot. Add tortillas (one at a time) and cook for 2-4 minutes (flipping frequently) until crisp. Continue with the rest
