This arugula pizza recipe is very forgiving! Customize it with whatever you have on hand. Some of our favorite additions and substitutions:
We like using a baking steel or pizza stone for best results! Preheat your oven and baking steel for 30-60 minutes before baking, then use a pizza peel (or a cutting board or flat baking sheet) to carefully transfer your prepared pizza to the hot stone (we like using a piece of parchment paper to make it easier to slide the pizza around). When pizza is ready, use tongs to carefully pull it out of the oven and onto a cooling rack or cutting board.

Prosciutto And Arugula Pizza With Marinara
Yes! If you want to mimic the crispy crust you get with a pizza stone, you can put a sturdy sheet pan - one that you know doesn't warp in high heat - into the oven (if it has edges, turn it upside-down it so it's easier to slide the pizza on) to preheat for 30 minutes or so, then slide your pizza onto the hot baking sheet. You can also make this recipe into a pan pizza: just press the dough into shape right on a baking sheet or pizza pan, top, and bake!
Do I have to heat my oven to 500° F? Nope - you can absolutely use a lower oven temperature if you prefer! We've baked this pizza at 450°F and 475°F with great results: just make sure you give your baking steel or pizza stone plenty of time to heat up (ideally 30 minutes to an hour) and extend the cooking time if you need to.
What if I don't have a pizza stone or baking steel? Place a sturdy baking sheet (one that you know won't warp in the oven) into the oven while it heats up. You don't need to heat this baking sheet as long as a pizza stone - 15 to 30 minutes should be plenty. If you're using a rimmed baking sheet, turn it upside down to make it easier to transfer the pizza on and off. Slide your pizza onto the preheated baking sheet just like you would a pizza stone (it will give you a similar extra-crispy crust!) You can also make this recipe as a pan pizza: just press your pizza dough into a sheet pan or pizza pan, top, and bake normally (you may need to adjust the cooking time if you use this method).

Additions and substitutions. Use burrata, goat cheese, or parmesan in place of the mozzarella. Image 1: Gather all your ingredients and cut the shallot (or onion) and mushrooms into thin slices. You need about 1 cup of the shallots and ½ a cup of mushrooms. See our ounces to cups conversions chart if needed.

Image 2: In medium saucepan heat a little olive oil on medium heat with the shallots and mushrooms for 7 minutes stirring frequently. If it starts to burn then turn the heat to low. About a minute before they are done stir in the coconut sugar and a sprinkle of salt to the caramelized onions or shallots and mushrooms.
Image 3: Roll dough out on and bake on a heated pizza stone, pizza pan, or baking sheet pan with a rim. Keep the oven on to bake the arugula prosciutto pizza in the next image (although the arugula is added after baking).
Image 4: Remove the pizza from the oven rack and evenly top with an even layer of the cheeses, then caramelized mushrooms and shallots, followed by pieces of prosciutto slices.

The slices of prosciutto meat are wide, so carefully break them apart to separate into smaller pieces before adding to the entire pizza.

Transferring the pizza dough to the hot stone or baking pan is tricky. I like to carefully lift the parchment paper paper off the kitchen counter with my hand under the center and the pan close. Then quickly flip it over on top in the center.

Or if you can hold a pot holder, grab a pizza pan and place it on top of the rolled out dough, then flip with your hand under the parchment paper. Remove the sheet of parchment paper once the pizza crust is flipped, then roll over the edges to form a crust.

To make this pizza dairy-free, use a dairy-free pizza crust and vegan ricotta cheese or your favorite shredded vegan cheese in place of parmesan and mozzarella cheese.

This arugula prosciutto pizza saves well for about 3 days in a sealed airtight container. To reheat the pizza, remove all the arugula leaves first otherwise they wilt and shrivel up. Then heat in a preheat oven at 350 degrees for about 5 minutes or until heated through. Add fresh arugula leaves right before eating.
