This zucchini pizza is the ultimate summer dinner! Quick & easy to make, it's packed with flavor from raw and roasted zucchini, pesto, and herbs.

Last week, I wrote all about our beautiful, flourishing herb garden. Over the next 2 days, it poured down rain, our big basil plant got overwatered, and now it’s sort of falling over on itself. It’s a good thing we planted two! It’s also a good thing that we’re not farmers because we can barely keep a few deck plants alive 🙂

We went to the farmers market last to get produce from ACTUAL farmers on Saturday, and I brought home these cute mini zucchini and tiny pattypan squashes. It inspired me to make a big green zucchini pizza to go along with our surviving herbs from basil plant #2 and lots of fragrant fresh thyme.

Sausage And Zucchini Breakfast Pizza Recipe

This zucchini pizza recipe isn’t complicated to make, but I prepared the squash two ways, which creates a unique mix of flavors and textures on this otherwise very simple pesto pizza. First, I roasted the pattypan squash in the oven on top of the crust and the cheese. Then I peeled the mini zucchini with a vegetable peeler and marinated the thin strips in a bit of olive oil, lemon juice, salt, pepper, and fresh thyme.

The raw marinated zucchini goes on top of the cooked pizza along with lots of fresh basil, fresh thyme, generous scoops of pesto, and a healthy drizzle of olive oil. It’s a fun one to make and assemble because it’s so green and pretty! It’s delicious too – serve it with extra pesto on the side for scooping!

Zucchini Crust Pizza

This summer zucchini pizza features zucchini two ways: roasted and raw! We love its range of textures and fresh flavor from summer herbs.

In a small food processor, combine the pepitas, garlic, salt, and pepper and pulse until combined. Add the lemon juice and basil and pulse again. With the blade running, drizzle in the olive oil.

A zucchini boat features fresh zucchini that are split in half, hollowed out down in the center to create a “boat” opening, then stuffed with any manner of your favorite toppings. Once the zucchini boats are filled, you bake them to tender perfection and dive on in.

Zucchini is mild, so it lends itself well to a wide range of flavors (see this Zucchini Stir Fry for a delicious Asian-style prep).

You can make zucchini boats with just about any blend of fillings and toppings, but this pizza version is hard to beat. I find that Italian ingredients pair with zucchini especially well (as evidenced by Zucchini Pasta and Zucchini Ravioli).

From the tomatoes in the pizza sauce to the basil on top to the bubbly, melty mozzarella cheese, each ingredient in this recipe works scrumptiously and naturally together.

Gluten Free Zucchini Pizza Crust

As someone who loathes having a kitchen gadget that only does one thing (I mean, how often am I balling a melon??), I was pleased to find another use for mine!

Part of the beauty of this recipe is how easy it is to customize. You aren’t committed to a single flavor. Everyone in your house can create the personal zucchini boat of his or her dreams!

A note on pepperoni: To save zucchini pizza boat calories, you can swap turkey pepperoni for the regular pepperoni. Honestly, I’m glad we splurged for the regular. It’s worth it here!

Pizza With Zucchini And Basil Pesto Recipe

A note on sausage: For Zucchini Pizza Boats with sausage, I do prefer chicken or turkey sausage over pork sausage as it is less greasy and is still ultra flavorful. You do you.

Vegetable Tip: If your vegetables contain a large amount of natural moisture (like tomatoes or spinach) or are super firm (like diced sweet potatoes), sauté them first until tender and most of the liquid has cooked out, then top your zucchini and bake.

Zucchini Grilled Pizza

I use my super easy homemade pizza dough recipe to make the dish from scratch. It yields two pies that have irresistible crispiness, and only takes about an hour to prepare! Or if you are in a pinch for time, store-bought crusts can be used. Look for 1 pound of fresh dough or the 10 to 12-inch wide pre-baked rounds.

Baking the pizza on a large sheet pan yields a larger pie and gives you more flexibility on the size, shape, and thickness. However, for an extra crispy crust, you can bake the pizza in a large cast-iron skillet. You can also grill the pizza dough, flip over, then add the toppings and heat until the toppings are hot and bubbly.

To switch up this recipe, other ingredients can be used to pair with the zucchini. Slice up some yellow squash, red onions, or bell peppers for extra color and crunch. Add some mushrooms for a more savory taste. Sprinkle on some creamy feta, goat, or ricotta cheese. Add some pungency with marinated artichoke hearts or briny olives.
