Veggie pizza is traditionally made with crescent roll dough, but there’s no reason it has to be. Your favorite pizza dough, myWhole Wheat Pizza Dough, or Broccoli Pizza Crust will work too.

Cold Veggie Pizza: An Easy Crowd Pleasing Appetizer

This version of veggie pizza is healthier than the original because it’s made with Greek yogurt, with options for a whole wheat crust and lower-fat cream cheese. There are also lots of fresh veggies here, which means loads of vitamins and minerals!

This recipe is very similar to the classic Pampered Chef veggie pizza and the Pillsbury version as well; it uses Greek yogurt instead of mayo and has some extra seasonings in the cream cheese topping.

You can prepare the crust for veggie pizza a day ahead of time, and the entire pizza can be made 8 hours in advance.

We have a lot of healthier game day recipes on (you can check them out here), but this one holds a special spot in my heart for exactly three reasons. 1) It’s delicious, really delicious. 2) It’s all make ahead—no work during the game. 3) These veggie pizza appetizers have roots in my childhood.

Growing up, my parents always threw a big rager of a 4th of July party every year for all of our friends and family (think 50+ people pitching tents all over the property and spending all weekend drinking, eating, and swimming).

And one of our family friends always made a big batch of veggie pizza appetizers for us to snack on during the weekend. It was a crowd-pleaser. It even satisfied the veggie-hating kids at the party.

The original version uses canned crescent rolls as a crust and a ton of cream cheese and sour cream for a sauce (hence why the kids would tolerate the veggies), but my version has a homebaked multi-grain crust and an herbed sauce that is healthified thanks to my beloved Greek yogurt. It’s just as yummy, but even healthier!

For a crowd, I like to pre-cut these cold veggie pizza appetizers into easy-to-grab squares. It looks so beautiful on a platter (especially when it’s up against all the brown-colored food that is typical of the Super Bowl buffet), and I think it’s a fun alternative to your standard veggie and dip tray.

The Best Cold Veggie Pizza

Trust me, no one will miss the dried out tray from the grocery store if you’ve got these flavorful squares in your offering.

You can mix-and-match whatever raw veggies you like for your topping. Here, I used a combo of broccoli, peppers, carrots, and red tomatoes. This is a great mixture of textures (crunchy, smooth, watery) and flavors (sweet, tart, mild), plus it’s a whole rainbow of pretty colors! Other options: sliced green onions, chopped cauliflower, sliced olives, chopped celery, corn kernels—anything!

The best part of this game day recipe? You can make all the components ahead of time and just assemble it right before kick-off. In fact, the longer the sauce sits and melds, the more flavorful it gets. So go ahead, bake up the crust, mix up the sauce, and chop your veggies the day before the game. Then just assemble your veggie pizza appetizers and cut right before your guests arrive. I’m definitely not one of those game day hosts who wants to spend her time in the kitchen while everyone else is enjoying the game. I want to get a chance to enjoy the game, too! I find myself entertaining a lot over the holidays, and when I need a quick and easy appetizer to serve a hungry crowd, I turn to this veggie pizza. It’s fresh, colorful, festive and is always the first thing to disappear from the snack table. You won’t believe how easy it is to make, and your guests will be asking you for the recipe!

Homemade Cold Veggie Pizza

This veggie pizza is one of my favorite vegetable appetizer recipes. For more veggie appetizers check out my avocado dip, buffalo cauliflower and caprese skewers.

To make this veggie pizza recipe, you will need crescent roll dough, cream cheese, a packet of powdered ranch dip mix, sour cream, carrots, broccoli, bell peppers and green onions.

To make veggie pizza, start by preheating the oven, and coat a baking sheet with cooking spray. Unwrap the crescent dough, and either roll it into a rectangle or simply press it into a rectangle inside the sheet pan to form an even layer. Bake the dough until brown, then cool. Place the cream cheese, sour cream and ranch dressing mix in a bowl and mix until combined. Spread the ranch mixture over the pizza crust, then sprinkle on the chopped veggies and green onions. Cover and chill for one hour to let all the flavors blend together, then cut into squares and serve.

Easy Vegan Pizza In Minutes

I prefer to cook the broccoli before I add it to the pizza, as raw broccoli has a stronger flavor and harder texture. You can cook it or leave it raw,

You can put so many different vegetables on top of pizza! My favorites include mushrooms, bell peppers, onions, broccoli, spinach, artichoke hearts, zucchini, tomatoes and asparagus.

Cold

The key to keeping vegetable pizza from getting soggy is to pre-cook vegetables that have a high water content. Certain veggies such as zucchini, mushrooms and spinach will release excess water especially when cooked, so it’s better to pre-cook them to evaporate off the liquid before they are added to pizza.

Healthy Vegetarian Pizza Recipe (gluten Free)

It’s up to you whether you cook vegetables before you add them to pizza. Vegetables that are pre-cooked will not be as wet, and have a softer texture. Raw veggies will have a crispier texture. In the case of this cold veggie pizza, I mostly use raw vegetables to get that great crunch texture.
