Book update! I’m nearly done with After You. I’ve enjoyed it way more than I expected to. My issue with it initially was that I loved Me Before You
Much that I didn’t want there to be an after. I was worried about how it would deal with the characters and relationships I’d already grown to love. I’m glad I waited until I could read it for free from my library downloads. BUT I’m also really glad I did finally have the chance to read it. I’m reserving the right to change my mind completely depending on how the ending is. The ending can absolutely make or break a book!

Annnd along the same lines… I just watched the movie Me Before You. I’d heard some unhappy reviews of it after it came out in theaters. I knew once it was available on DVD I’d see it. I enjoyed it but like any book turned into a movie… the book was SO much better. There was so much more to love about what you’re reading than watching. Not to mention that so much gets left out or maybe the characters you pictured in your head, turned out to be different on screen. Still a good watch, but I went into it with fairly low expectations.
Triple Cheese Covered Stuffed Crust Now Exists, Thanks To Pizza Hut
Also, something weird happened this week. It’s as if retailers everywhere had a date marked on their calendars ready to press a button and spam everyone with very premature Christmas ads. It’s still September! We all know it’s coming. We don’t need three months to plan for it. One month is more than enough. Seriously. I know some people start planning and counting down for next Christmas once the current one passes. That’s not me. I want to enjoy every holiday. Let’s get through Halloween, election day and Thanksgiving first please.
I’m not sure how it’s possible, but dates don’t lie. It’s been nine months since my last pizza post. We were clearly way overdue for a new pizza recipe. It honestly didn’t feel that long, but that’s probably because we have pizza night every week in my house. It’s our thing. The kids… okay and the adults, totally look forward to it. There is never a question of what we’re having for dinner on Friday nights. It’s pizza night. Pizza and a family friendly movie.
Out of all of the pizza recipes I’ve shared, I’ve never shared a basic cheese pizza recipe. I have a pan pizza with option to be cheese only and a white pizza with a garlic and olive oil base… but no classic cheese pizza. We needed to change that, because a classic is always a winner. And this cheese pizza is a total winner.

What I’ve learned through the years is to whip up this pizza loaded up with cheese, cheese, and more cheese to surprise him! The look on his face when he walks into the kitchen is priceless.
For this recipe, I skip using my pizza sauce recipe. Instead, I usericotta cheese as my base and spread it onto my homemade pizza dough, top it with big hunks of mozzarella and then with parmesan that I grate right over the top. Mercy!
Then, I just pop the pizza into the oven for a few minutes and until the pizza crust is nice and golden brown and the cheese has melted into a glorious layer upon layer of cheesiness.
Three Cheese Pizza With Pancetta And Mushrooms Recipe
Once I take it out of the oven, I have to work quickly because all bets are off with fresh, hot pizza at my house! I quickly cut it into slices and then step back to serve it. Of course, I like to serve a huge green salad alongside the pizza and think that so many flavors of dressing compliment it well, but my favorite is balsamic vinaigrette. Yum!
This simple pizza recipe works perfectly for pizza night at home, tailgating with friends and family, or even for entertaining. Just be sure to make extra! It goes quickly!

Prep time does not include time for the pizza dough to rise as that time is included in the pizza dough recipe.

When choosing cheeses for your homemade pizza, you want to look for ones that have a lower moisture content and that melt nicely. This cheese pizza recipe uses quark, Grana Padano, and fresh mozzarella. Grana Padano is a harder cheese than mozzarella, but because it’s grated before being added to the pizza it melts well.
Classic Thin Crust Three Cheese Pizza
Before you can assemble the homemade cheese pizza, you need to first make the pizza sauce. To do so, sauté the chopped garlic in a little olive oil in a skillet. Cook until slightly softened, then add in the crushed tomatoes and Italian seasoning. Cook the simple pizza sauce until slightly thickened, then turn off the heat and add the Quark Cheese.
Once the sauce has been made, roll out the pizza dough on a floured surface (stretch it gently with your hands if you don’t have a rolling pin). Then, leaving a 1-inch border around the edges, spread enough of the pizza sauceonto the dough to coat. Evenly top with thegrated fontina cheese, torn mozzarella cheese, andhalf the grated Grana Padano cheese.
Bake the pizza until the cheese is melted and the crust is golden brown. Wait a few minutes to cut into the pizza (this will give the cheese time to set slightly
