7 tablespoons unsalted butter 3 melted 4 softened add all dry ingredients to a bowl and mix well then slowly add water and melted butter until the dough ball comes together knead this for 8 10 minutes until the dough is glossy and smooth alternatively in a mixer beat dough for 5 6 minutes with the dough hook on medium

Take it as hot as it will go preheat a cast iron skillet on your stove top over medium heat for 5 minutes once hot douse with olive oil and a sprinkle of cornmeal spread your dough out to about the size of the bottom of the skillet you are using carefully cover the bottom of the skillet from edge to edge for a nice pan pizza

Spread marinara sauce over top then sprinkle with the remaining mozzarella and parmesan cheese bake in a 450 f oven for 23 25 minutes or until the crust and cheese turn a deep golden brown let the pizza rest in the skillet for 5 10 minutes before slicing garnish with fresh herbs and crushed red pepper flakes if desired

Directions sprinkle yeast and brown sugar over warm water in the bowl of a stand mixer fitted with a dough hook let stand for 5 to 10 minutes or until the yeast softens and begins to form a creamy foam turn the mixer to the lowest setting and slowly add 2 cups flour 1 2 cup at a time
