White pizza is any pizza that doesn’t use tomato sauce as a base. White pizza is also referred to as Pizza Bianca. Instead of tomato sauce, white pizza can use just olive oil, or a creamy white sauce, such as Alfredo or simply a layer of ricotta cheese as the base.

Goat Cheese – plain goat cheese is all you need here, but you could sub a nice honey goat cheese here if you like.
Arugula – again, the slightly peppery arugula is a great finish for this pizza, but you can omit, if you don’t have it on hand.
Optional Ingredients – Goat feta is a great addition, as it adds a bit of a salty note. Finishing with a drizzle of balsamic glaze is also a nice addition.

For oven pizza baking, I like to roll and top my pizza on top of a piece of parchment paper. Before baking, I trim the parchment around the pizza a bit. I then use a pizza peel to transfer the pizza (on the parchment) to a hot pizza stone in the oven. After about 5 minutes in the oven, I use tongs to grab the parchment and slide it out from under the pizza, leaving the pizza to cook directly on the pizza stone until done. The pizza should slide out easily.

Parchment won’t work in a wood or gas-fired outdoor pizza oven. It will catch fire! For outdoor ovens, flour the peel lightly, then generously coat it with cornmeal before placing the rolled dough on it. Top the pizza quickly on the peel. Shake the pizza on the peel before launching. If it doesn’t slide easily, it won’t launch well, so add some more cornmeal underneath until it slides.

The pizza I’m sharing today is a spin on classic white pizza. It’s cheesy and garlicky, just like one might expect…but I put a twist on it by adding the tang of goat cheese and the sweetness of balsamic vinegar. It’s savory, salty, slightly sweet, and most definitely addicting.
There is a perception out there that pizza dough is difficult to make. I’m here to tell you that it is SO EASY, people. It DOES take some time, and you DO have to invest (cheaply) in a bottle or box of active dry yeast, but once you mix it all together, you can leave it alone and go about your day. It’s a low-maintenance relationship. The yeast does all the work.

Now, I know YEAST may sound like a strange ingredient to a lot of people…but really, it’s essential to tons of common dough recipes: breads, pizza, rolls, coffee cakes, pretzels, and even cinnamon buns. Yup. All yeasty. All delicious.

This uses my favorite quick and easy white pizza sauce —a simple olive oil infusion with shallots, rosemary, and garlic —and then the toppings are really up to you!
I think broccoli and thinly sliced tomatoes are some of the most underrated pizza toppings so that's what you'll see in these photos, but I've included some other suggestions as well!

Okay, this is a diet-talk free zone. So when I tell you that the best toppings for this white pizza are low in fat please know that I'm coming from a science-of-pizza-toppings place and not a fat-is-inherently-bad place.
In the heat of the oven, the fat in high fat toppings like pepperoni, bacon, soppressata, sausage, prosciutto, etc. melts out and combines with the fats in the cheeses to make this white pizza soupy and greasy.

Start by preheating your oven to 500°F with a baking steel or pizza stone (read mybaking steel reviewto know why I recommend a steel over a stone!) arranged as close to the heating unit as possible.
In most ovens, you'll want it about 7 inches below the broiler unit at the top of your oven. In ovens with a bottom drawer broiler, just get the baking steel as close to the heating unit in the oven as possible, and place an inverted sheet pan in the broiler area.
Give the steel 45-60 minutes to preheat, take your pizza dough out of the fridge, and use this time to prep the sauce and white pizza toppings.
