Unfed Sourdough Pizza Recipe

Most sourdough pizza crust recipes call for added yeast, and the ones that don't require fussy extra steps and fancy flours. Not mine! For this no yeast pizza dough, you only need four simple ingredients (sourdough starter, water, salt, and bread flour), and the kneading time and effort are minimal.

Just mix the dough, let it rise overnight, ball it up, and let it rise some more before stretching and topping. You'll need at least 13 hours or up to 24 hours to achieve optimal texture and flavor. In case it helps, here's how I plan it out: Mix the dough right before bed (for me, 10:30pm-ish). If you want pizza for lunch, let the dough rise until 11am the next day, then ball it up and let it rest until noon before stretching. If you're having pizza for dinner, let the dough rise until 4 or 5pm, then ball it up and let it rest for an hour while you preheat the oven and prep the toppings.

And learning how to make sourdough pizza dough is easier than you think. With just a few simple ingredients that you already have at home and your Sourdough Starter Discard, you are all set.

Want to let the sourdough pizza crust overnight you can. This recipe is very forgiving and can be used in multiple ways. One of the ways I use the dough is to make it and set it in the microwave overnight.

Add dry ingredients to large mixing bowl, mix. Add oil and sourdough, mix, add about 3-1/4 C of the water, mix using dough whisk until it all comes together and flour is mixed in off bottom of bowl. Add small amounts of remaining water if necessary.

Add a splash of vegetable oil to dough ball to make it easier to work with and not stick to your hands.

After dough is elastic, place dough ball onto a sheet of parchment paper. Press dough out with hands to form the sourdough pizza crust. A rolling pin can also be used. Press/roll dough until it is about 1/8″-1/4″ thick, depending on your preference.

Once dough is pressed/rolled out, bake at 350 degrees for 10 minutes. Do not add the pizza sauce at this stage. Remove from oven.

Wrap an additional layer of plastic wrap going the opposite way. Then cover with foil and label the date and what it is. u003cbr/u003eu003cbr/u003eMake sure not to stack the crusts on top of each other until they have frozen overnight. Once they have been completely frozen you can stand them on their side or lay them down and keep frozen until ready to use. u003cbr/u003eu003cbr/u003eThen remove them from the freezer and put them in the fridge to thaw out completely. Bread Flour: You can use bread flour as part of the flour base for this recipe. I would use 3 cups of bread flour and 3 cups of all purpose flour. 

Whole Wheat: I have not tested whole wheat flour for this recipe. But I have used it in the past and as a general rule of thumb it is a bit thicker to add it in. So if you would like to try it, maybe think about adding in a tablespoon and seeing how it works before you replace cups. Again, I have not tested whole wheat flour in this recipe

This recipe has been made using sourdough discard but I do want to explain why and how you should use discard in this recipe so you have the most success possible!

Basically, the success of this discard pizza dough will depend on the age and strength of your sourdough starter, so here's a quick chart so you know what to use and when.

If your sourdough starter is mature and doubling regularly, you can use your unfed discard with no yeast. It will just take a bit longer to double than if it was active.

Cast Iron Sourdough Discard Pizza

If your sourdough starter is only young and not doubling consistently, add 4g of yeast to help it along. If you want super fast pizza dough, add 7g of yeast.

If you have a mature sourdough starter, this recipe works perfectly with an active, bubbly starter. It will take less time to double than discard will.

This sourdough discard pizza dough is described as quick because it is really easy to pull together - you can literally throw it in a bowl and you're half way there.

Kneading by hand is really easy - you just need to knead it until the dough becomes soft and supple. It will be quite elastic and stretchy. Don't be tempted to add flour to the surface you're kneading on. Use a metal dough scraper to bring the dough together if you need to (this can be handy to scrape up sticky dough while you build gluten).
