The first time I heard of making pizza on a grill all I could think of was, why would anyone want to do that?

Now that I've done it more than a few times I can think of several reasons, the first being who wants to heat up an oven to 450°F or higher on a hot summer day?

If you use a grill to make pizza, you can keep the heat outside where it belongs. Grills also better mimic a wood fired oven than your conventional indoor oven.

Whether using charcoal or gas, the smoke from the grill will help give your pizza great flavor that you simply cannot get from a regular oven.

It's also easy! No, the pizza dough does not fall through the grill grates. Assuming you've properly heated the grill, your dough will form a lovely lightly browned crust.

How To Grill Pizza (the Best Grilled Pizza Recipe!)

The trick is that you cook the plain dough first, on one side, on the grill. Then remove it, flip it, brush the grilled side with sauce and toppings, and return the pizza to the grill for final cooking.

This is a quick how-to on the grilling steps. I'm assuming that you already have pizza dough ready to go, but if not, we have a great recipe here on our homemade pizza post.

Any topping you put on pizza baked in the oven can go on grilled pizza, but because the grilling time is only 2 to 3 minutes once the toppings go on, many toppings will still be raw when the pizza is done. For vegetables, that's fine if you don't mind them super crunchy, or you can cook them before putting them on the pizza. But, for meats, that's a problem. Any meat you put on top of this grilled pizza must be pre-cooked.

Easy Deep Dish Pizza Using A Gas Grill

Today, I’m sharing a full tutorial on how to grill pizza. As you’ll see, grilled pizzas differ a bit in technique from oven-baked pizzas.

Choose your toppings wisely (you’ll find suggestions below) and follow my recipe until you get the hang of it. Then, you’ll be a grilled pizza champion!

Aim for a grill temperature between 400 to 500 degrees Fahrenheit. I’m offering a wide range here because grills, as opposed to ovens, tend to fluctuate more in temperature. I’ve achieved great results with this range. You can let the grill get a little hotter, but over 550 degrees, you run the risk of your char marks tasting a little, well, burnt.

Grilled Pizza [easy Dough & Topping Ideas]

If your grill doesn’t have a built-in temperature gauge, you can use your hand to help determine the correct temperature. The grill is hot enough when you can hold your hand about five inches above the grates for just one second before it becomes uncomfortable. Obviously, use caution and your best judgment with this technique!

Simply roll out the dough on a lightly floured surface to help prevent it from sticking to the pizza peel later. Lightly brush the top of the dough all over with olive oil. The oil helps prevent sticking when we flip the dough onto the grate.

Contrary to baked pizzas that enter the oven fully dressed, we’ll need to grill the pizzas in two part. First, we grill the dough (oiled side down) until it’s lightly firmed up. This takes just a couple of minutes. Then, remove the dough from the grill for the next part.

Homemade Pizza On The Grill

Grill the pizza until the cheese is melted. This will happen quickly! Pull your pizza from the grill, add any final toppings like fresh basil or arugula, and enjoy.

When it comes to grilled pizzas, less is more. Grilled pizzas will never develop golden, bubbling cheese like you can achieve in a hot oven, and I recommend working with tender toppings since the pizza will not be in the grill for long.

How To Cook Pizza On A Gas Grill

Grilled Pizza Recipe: Have An Outdoor Pizza Party With This Easy Grilled Pizza Recipe

I found that hosting a grill your own pizza party is always a huge hit with my friends and friendly co-workers. Sit everyone down at the picnic table with a piece of pizza dough and let them stretch it out.

Once the first side is baked and flipped,  have a table filled with topping options, and let them create their own masterpieces to bring back to the table and share.

Even better for those who hate dishes, all of the prep and serving can be done on parchment! A friendly warning, I LOVE parchment and will be raving about it for this entire blog. I couldn't bake without it.

Our Pizza Crust recipe is great for making the night before, popping in the fridge, and taking out 2 to 3 hours before the guests arrive. Another fantastic choice is Neapolitan-Style Pizza Crust, made with our '00' pizza flour. The easy-to-shape dough yields a wonderfully chewy, crispy crust that tastes even better grilled. 

1) You can bake on a pizza stone, baking steel, or right on the grill. I prefer the grill marks, so I typically always go right on the grill.

2) Keep your grill on low. For my grill that means anywhere between 300°F-375°F. There's a pretty short window between grilled and burned when the grill is set too hot.

3) Grill one side of the dough first, and put the cover down to get it baking. Oil the pizza before it goes in so that the top (which becomes the bottom) crisps nicely. Once you flip to the other side, you can add the toppings. After you put the toppings on, put the cover down again to get the cheese melting.

5) Make sure your grill or pizza stone is well oiled. Brush with oil before the dough goes down, or you'll have a mess.
