It’s no secret that pizza is THAT food for me. The food I would choose if it was my last meal on earth. Gimme all the cheesy pizza and a couple of craft beers!

In fact, when Mike and I were dating in high school, our dates ALWAYS included Godfather’s Pizza and then an ice cream cone at McDonald’s. Still to this day, there is nothing we enjoy more than a big ‘ole pizza, heavy on the cheese!

For all of my pizza recipes, you can choose to bake them 1) in cast iron skillets in the oven or on a grill, 2) on baking sheets in the oven, or 3) on pizza stones in either the oven, grill, or smoker. We tend to rotate how we cook them based on the weather outside and how many people we are feeding.

I was thinking about it the other day and it looks like we eat a lot of pizza because we have so many recipes up for pizza. Mostly this is because my sister will post a pizza recipe and then I post one, but it’s also because our pizza dough makes 4 med pizzas or two larges and since we have a small family when we do make pizza we usually make pizza twice in two weeks so we don’t waste the dough.

Our favorite pizza is Margarita. We love the simplicity and freshness of ingredients. It’s what we make almost every time we make pizza. I think we have found another favorite, BBQ chicken with Bacon. It’s so simple, but the flavors have a slight smokiness with sweet to round it all out. The cilantro on top is delicious. A friend was telling me that CPK adds cilantro to theirs and it’s her favorite. I haven’t tried their version, but I did copy them with the cilantro and sure enough I loved the freshness and the flavor of the cilantro on top.
Place pizza in the skillet and cover loosely with a lid, or create a dome out of foil, cook for 4-5 minutes.

Bbq Chicken Pizza With Homemade Dough

I made this recipe on a whim one night and decided to add bacon and parmesan because I had it in the fridge. OMG was that the missing final touch.
BBQ chicken pizza is exactly what we all need in our lives. I ended up teasing this recipe out a few weeks ago via the gram and got A LOT of ‘heart eye emojis’ in return so I figured it was time to share the secret recipe.
If you can’t get enough smokey barbecue, definitely try baking ribs in the oven. Classic pulled pork gets an upgrade when piled up on slider rolls. I also highly recommend topping your pizza with buffalo chicken!
My Protein Bbq Chicken & Bacon Pizza 400g
I swear bycaramelizing the onions. This consists of slowly sautéing the onions in a little butter before topping your pizza. It’s easy to do and it brings out the onion’s natural sugarsandflavors. After all, this is gourmet pizza and I think it makes a big difference.
The key to caramelized onions is to cook the onions on low heat or they will burn. Low and slow is the trick to perfect tender and golden brown onions that deliver tremendous flavor. It takes about 20-30 minutes but if you’re in a rush you can cook them until they’re just super tender.

BBQ chicken pizza uses BBQ sauce in place of red sauce. It sounds weird but it’s honestly the only way the recipe works. Look for Sweet Baby’s original BBQ sauce, It’s one of my favs and it has a nice subtle sweetness that balances all the savory toppings. Any of their BBQ sauces will work, I’d likely just skip any that are spicy. My only suggestion here is to keep the sauce thin. You don’t want globs of it.
How To Make The Best Chicken & Bacon Pizza With Ranch Or Bbq Sauce
I cook all of my pizzas using apizza stone. I heat the stone up for one hour in the oven at 500°F before baking. Slide the pizza in using a well-flouredpizza peeland bake for 10-15 minutes for the perfect finish every time. You can read more about this method andhow to makebetterpizza at home here.
A pizza stone delivers phenomenal crunch thanks to the very hot cooking surface. The dough will cook very quickly and render it crunchier on the outside with a tender inside.

If you don’t have the time or patience to caramelize the onions, sautee them for 10-15 minutes until golden and tender. They will still be delicious and less intense.

There are some things in life that you should totally be allowed to eat with a spoon. A really good, thick and smoky barbecue sauce is one of them. Not all BBQ sauce meets that criteria, but when you find one that is completely awesome, a nice big spoonful is awfully tempting and it tastes good on just about everything. It’s awfully good used on this Barbecue Chicken and Bacon Pizza.
Sure, there might be a thing or two that the kids might want to pick around. You can customize it how you like, but we like this one just as I wrote the recipe at the end of this post. In fact, I made my son overlook the tomatoes (something he despises) and just take a big bite to see if he liked the pizza. He complied, he took a great big bite, and he agreed that it was delicious. The barbecue sauce and the gouda cheese take over the starring role in the pizza, and the other tidbits just add a little something extra here and there.
You can use a store-bought pizza dough if you’d like. I don’t like the stuff in the can, but Trader Joe’s and other specialty stores sell a ball of dough that is usually pretty decent.
