If you’re hungry, crave pizza, have 10 minutes and a tortilla at home, it’s time to make this simple vegetarian tortilla pizza. This simple recipe is healthy, low in calories and will satisfy your pizza cravings!
I made this recipe a while ago, using one very old tortilla, my last one from the package. But was still so delicious! I didn’t have many ingredients at home, so I used whatever was available:

You can modify the ingredients any way you want – you can leave out the artichokes, add pesto to the sauce, add Parmesan cheese or make it non-vegetarian if you want – simply play around with the toppings. I also highly recommend adding some fresh basil in the end.
Tortilla Tuna Pizza Recipe
This recipe is super easy to make, but make sure to keep an eye on your oven, because you don’t want to burn the pizza or overcook the tortilla and make it too dry.
To do this, make sure to bake the pizza in the highest part of your oven, so that the cheese can melt, but the tortilla doesn’t get too dry. 3-4 minutes of cooking this way should be perfect.
I also highly recommend sprinkling some extra virgin olive oil and adding some fresh arugula on top at the end – it is very tasty!

MethodPlace two large baking trays in the oven – alternatively, the pizzas can be placed directly onto the oven shelves. Preheat the oven to 220°C/Fan 200°C.Add the olive oil and garlic to a cold saucepan and place over a low-medium heat to warm for 1–2 minutes. Then add the tomatoes, herbs and tomato purée and mix thoroughly, breaking up the tomatoes.Increase the heat and bring the mixture to the boil. Then reduce the temperature and leave to simmer for 5–7 minutes. Use a fork to break up any remaining large pieces of tomato – alternatively, use a hand blender for a smoother result.Place the tortillas on a clean, dry surface. The tortillas will form the base of the pizza. Spoon about 3 tablespoons of the tomato sauce onto each, and use the back of the spoon to evenly coat the tortillas, leaving a 2cm edge for the crust.Tear the mozzarella into small pieces. Add a quarter to each pizza, spreading the pieces out evenly.If using smoked paprika, place the sliced mushrooms into a bowl and sprinkle the paprika over the top. Toss gently to coat all slices with the paprika.Add the slices of mushroom, red onion and pepper to all the pizzas.Carefully remove the baking trays from the oven. Transfer the pizzas onto the trays and place them back into the oven. Cook for 5–10 minutes, until the cheese has melted and the crusts are golden.Top tip The tortilla wraps in this easy vegetarian meal are a healthy alternative to a pre-made pizza base. If you prefer a thicker crust, wholemeal pitta breads and English breakfast muffins (cut in half) are also good options. If you have leftover vegetables, why not use them as a pizza topping? Just slice them finely enough to cook through in 5–10 minutes.

Tortillas, pita and naan work great for this and it’s awesome because you don’t have to fuss with making a homemade crust. Or argue over the topping situation. Everyone gets their favorite toppings and a whole pizza to themselves.
We always seem to have extra tortillas around so that’s what I’m using for this recipe instead of traditional dough. Plus, I’m a huge fan of crispy, thin-crust pizza and using tortillas for the crust ensures each bite has a little crunch factor to it! Both corn tortillas and flour tortillas work great for these pizzas.
