I rarelyspeak of love when it comes to pizza. Don’t get me wrong. I really, really like it, but pizza is pizza as far as I’m concerned.Nothing too special – it’s bread, sauce, and toppings.

Their offeringschange from time to time, but the one constant is thebutternut squash sauce. I wasn’t sure what to think at first, but it was love at first bite. The butternut squash createsa creamy, buttery, savory-sweet base that I adore. And that’s saying a lot from a die-hard tomato sauce addict!

Vegan

I typically go for store-bought pizza dough because it’s so easy and keeps this recipe to just 10 ingredients. But feel free to make your own if you prefer (find our gluten free version here). The real magic is in the sauce.

I also tried vegan mozzarella cheese on this pie, but I still prefer my homemade Vegan Parmesan Cheese! It’s literally the best and saves my dairy-free life when it comes toItalian food.

*The best way to cube butternut squash is to start with a large, very sharp knife, cutting off the top and bottom ends. Then cut in half where the small, cylinder shape and round, bulb-shape meet. Use knife to carefully remove skin. Then remove any seeds with spoon or ice cream scoop. True Food Kitchen Butternut Squash Pizza Is The Best Vegan Pizza I Have Ever Had.

Can we just talk about the fact that this pizza has all of the best Fall flavors combined into one amazing bite? I’m talking roasted butternut squash, caramelized onions, spicy sausage and fried sage. It is literally a party in your mouth.

Now to get all of these amazing flavors, it is going to take a little time and few steps. But believe me, it is worth the time.

The most time-intensive part of this recipe is the caramelized onions. If you have ever made caramelized onions before, then you know the process. It is all about cooking them low and slow. That is how they get that nice golden color and the amazing flavor.

Roasted Butternut Squash Pizza

To make the onions extra delicious, I also cooked them in the same oil that I cooked the sausage in. So they absorbed all of that amazing leftover flavor.

Used a pre-made dough. It is just so much easier than making it from scratch and you can find dough at just about any grocery store.

You MUST roll out your dough over corn meal. It gives the crust the perfect amount of crunch. I mean, you can use flour, but if you have corn meal, use it!

Roasted Vegetable Butternut Squash Tortilla Pizza Recipe

Spread out your dough on a baking sheet or pizza stone and spread the cream cheese sauce over the whole thing. Top it with your onions, sausage and butternut squash and place it in the oven for 15-20 minutes.

Vegan

AND, while the pizza is cooking, quickly fry some fresh sage leaves in a little oil or vegan butter and set aside.

When your pizza is done, pull it out of the oven and top it with the sage, fresh thyme and some chunky salt. Slice it up and dance around your kitchen…because I’m telling you, this is a party in your mouth.

In another bowl, combine plain flour with olive oil and salt. Pour the foamy yeast water over the dry, and mix until it forms a ball of dough.

Ricotta Butternut Squash Pizza With Spinach

Next, knead the dough on a well-floured surface for 5-10 minutes, or until the dough is soft. Divide dough in half, form into balls and place each dough ball into two different well-greased bowls. Cover them both with a tea towel, place them in a warm, non-drafty area for 1 hour 30 minutes.

Simply use a knife or potato peeler to remove the butternut squash’s skin. Next slice, then cut into cubes. You’ll only need 4 cups for this recipe.

Vegan

Transfer into a baking dish, along with the chopped garlic cloves, olive oil, ground cumin, chilli powder, dried oregano, salt and black pepper. Mix until all butternut squash cubes are covered with seasoning. Bake for 20-30 minutes or until tender. You want to make sure you don’t overbake them, as they will bake again after you assemble the pizza.

Butternut Squash Pizza With Beets

To make the pizza sauce, just combine olive oil, tomato puree/paste, ground cumin, chilli powder, maple syrup, grated garlic cloves, salt and pepper. That’s it! Set aside until needed.

While the butternut squash is roasting, start caramelizing the onions. Heat oil in a skillet/pan, and add in the sliced onions. Cook over medium flame, while constantly stirring to prevent the onions from burning. Once caramelized, remove from heat and set aside until needed.

Ok, hear me out. This may sound strange but I promise you it works. Start with a block of vegan cheese, grate 2 cups and then transfer into a bowl with 4 tbsp of water. I know you’re probably thinking I’ve gone crazy but doing this trick will gift you with vegan cheese that actually melts!

Vegan Butternut Pizza Crust

Grab a pizza tray, drizzle a little olive oil on it, and then add one of the risen pizza doughs. Using clean hands, stretch the dough to fit the pizza tray. If at anytime the pizza dough rips, don’t worry!! Just pinch the dough back together. Try your best to keep the dough thickness even.

Add one quarter of the roasted butternut squash, half of the onions and then 1/2 cup vegan cheese. Add another quarter and 1/2 cup vegan cheese on top. Sprinkle a little water over the vegan cheese, add a few leaves of kale, and bake!!

Can I prep the butternut squash and pizza sauce ahead of time? Yes! Just place the roasted butternut squash in the fridge for up to 2-3days. And bring back up to room temp before topping the pizza.
