One of my favorite places to get totally amazing pizza is California Pizza Kitchen, aka CPK.Ah-ma-gash I love that place. And my high school/college bestie Kelsi loves CPK as much as I do. We were regulars at the Provo location. Pretty sure we kept them in business.

Yesterday was super special because it was Kelsi’s wedding day. Woot woot. She was gorgeous to the max (as always) and they had an ice cream bar which is pretty much my dream come true. Seriously. My wedding was in the winter and it was freezing so we did a hot chocolate bar. That was pretty great. But guys. Ice cream. My other lover.

Anyway this pizza. It’s an ode to my newly-wed bestie. One of our favorite pizzas from CPK was the bbq chicken flatbread pizza, it’s crazzzzy good. And this recipe is an easy peasy homemade version on – – – – – > FLATBREAD. I adore flatbread. Particularly? Flatbread pizza. And if you buy your flatbread pre-made (which um, I totally do) it makes this pizza such a quick and amazing meal. Pizza par-tay at my house!

Chicken Club Flatbread

Flavor tip: add a bit of heat (trust me, you’ll love this) by adding some sliced jalapenos – I prefer the jarred/canned ones for this pizza as the heat is toned down a bit and they are tender from the brine.

By something I had at TGI Friday’s. It is not a copycat recipe. Basically I ordered a flatbread I found on the appetizer menu, but I ordered it as my main dish. Am I the only one who does that? I do it all the time. I love appetizers. I’d probably rather have five appetizers every night for dinner instead of a main dish and two sides.

But this flatbread I ordered, it was mind-blowingly tasty. Like, I just craved it for weeks afterwards. All I remember is that it had florentine in the title, there was obviously flatbread involved, and there was chicken, spinach, and a touch of cheesiness. That about sums up the delicious experience that was happening in my mouth. If you could turn Italy into edible fireworks, that’s what it tasted like. An explosion of flavor from a simple dish. And that is what inspired this Chicken Florentine Flatbread recipe.

This recipe could be used as an appetizer, if that’s what you’re going for. But once you taste it, you’re not going to want whatever’s on the menu for the main course. Flatbread dough is made with similar ingredients as regular pizza dough of water, flour, yeast, oil and salt. The only difference is between the two is that the flatbread dough is rolled out thicker and is crispier than pizza crust.

You can use your favorite toppings for flatbread pizza. Once you make this dough you will want to experiment with so many different combinations. We skipped the sauce completely and used cheeses as a base. In this recipe we use:

Yes, this flatbread would make for wonderful crust if grilled. Bake initial dough without toppings in the oven. Then once all the toppings are added, grill the flatbread lined with foil so the crust doesn’t burn, allowing the cheese to melt.
