This Ricotta Pizza is made with a ricotta cheese mixture seasoned with garlic and pecorino cheese slathered on a delicious flatbread. Seasoned ricotta cheese makes the perfect white pizza base and I love using Naan as my pizza crust because it becomes a personal brick oven pizza and it requires zero work. I am pretty certain this is the easiest and most delicious gourmet pizza recipe you will find on the internet.
In the past couple of years, I have gotten really into white pizza. I blame this new found love on two Philadelphia pizzerias who make delicious white pizza. They are different from each other, but both delicious in their own way. Pizzeria Beddia makes amazing white pizza but it is made with more of a bechamel sauce and not ricotta. The other place I love is Franco’s. Franco’s is sort of this very classic old-school pizzeria. They have an excellent white pizza with vegetables and I started eating while pregnant and never stopped.

I think I have spoken about my change from pepperoni to vegetables a few times now, I used to always want pepperoni on my pizza, but in the past couple of years my taste buds have changed, and it opened me up to how delicious vegetable pizza is. I think, actually, it was because of Allison. She grew up loving vegetable pizza more than meat pizza and I guess she inspired me. But for real, a white pizza with veggies is my ultimate Friday night plans.
White Pizza With Homemade Pizza Dough And Sauce
I made two different versions of this Ricotta Pizza. I made one with just cheese and I made the other with some marinated artichokes hearts, the type you can find in a jar. Both were delicious! I love white pizza so much and making white pizza with ricotta could not be easier!
If you want to make this recipe on a regular raw pizza dough, you will likely not need as much of the ricotta mixture. I also recommend pre-baking the dough slightly. I love using Naan as pizza dough because it comes out tasting like my own personal brick oven pizza. Think cheese pizza is boring? Try changing it up with the more sophisticated White Pizza recipe. An herb and garlic infused olive oil is spread on a pizza crust that is topped with three cheeses for a delicious, cheesy pizza.

White Pizza With Ricotta And Feta Cheese
Not that I think there is anything wrong with cheese pizza. Or with pepperoni pizza. But sometimes you need something a little extra.
Like garlic and rosemary brushed over your crust. And then topped with 3 different cheeses. And a little red pepper flake for a hint of heat. This White Pizza (or Pizza Bianca) is one of my favorite pizza night choices.
Dough: Let’s start by talking about the dough. You can always buy dough, but I urge you to try my recipe for the best homemade pizza dough. It has tons of 5 star ratings, and I really do believe it’s the best pizza dough recipe!
Whole Wheat Broccoli Rabe & Ricotta White Pizza — The Skinny Fork
Sauce: This pizza doesn’t use a traditional pizza sauce (one reason it’s called a white pizza) but instead, you brush on a garlic and rosemary infused olive oil. All you need for it are those three ingredients – olive oil, garlic and rosemary. I use fresh rosemary, but if you want to use dry, remember that dry rosemary is pretty strong. You’ll only need about 1/4 teaspoon and you’ll want to make sure you chop it finely.
Cheese: For your three cheeses, you’ll need ricotta, mozzarella and parmesan. I first fell in love with ricotta on pizza when I made this Butternut Squash and Sage Pizza. And now, I really just want to put it on everything! For the mozzarella and parmesan, I like to shred them myself, as they will melt better that way.
Topping: To top it off, I add just a sprinkling of red pepper flakes. You don’t need much – just enough to give a little bit of a kick. (Although I have to admit that if I were making this just for myself, I’d probably lay it on heavier, because I love the spice!)

Ricotta and mozzarella are the standard, and often pizza makers will sprinkle either Pecorino Romano or parmesan on top, for good measure.
Garlic, in some way, shape, or form is also crucial. You can use fresh garlic or garlic powder, but in my experience, garlic powder works better for this type of pie.
Vegan White Pizza Recipe: With Tofu Ricotta (no Cashews)
When the mood catches me, I will change it up and encourage you to do the same until you figure out which one you prefer.
Another easy changeup for white pizza is to mix in spinach that has been sauteed with garlic, garlic sauteed broccoli, or even broccoli rabe.
Many pizzerias offer these types of pies on their menu and often have individual slices waiting in the wings in their glass display cases.
Crispy White Pizza With Ricotta And Asiago
Do yourself a favor and read our homemade pizza dough and New York pizza recipe. This will walk you through everything you need to know about making the best cold fermented pizza dough.
If you prefer to use store-bought dough, try to get it from your favorite pizza place. If it’s not balled, and instead sold in a bag, I recommend you ball it and get it in the fridge. Our recipe above goes over all the steps to balling your dough.

But if you were to step into most pizzerias in the NY metro area (and I’ve stepped into about 500 of them in my lifetime), ordering a white slice will get you the ricotta/mozzarella/garlic slice I’ve described above.
Peach & Bacon White Pizza With Ricotta
Some pizzerias may offer an “alfredo” slice, and that is where that type of sauce will show up, but not typically in a white slice.
Note:Use our pizza dough recipe referenced above and a pizza steel for best results. If you don’t have a steel you’ll want to use a pizza stone at a minimum.
The rack will prevent the pizza from becoming soggy and won’t trap air like it would if you placed it in a pizza pan immediately.
White Pizza With Bacon, Spinach And Mushroom
After a couple of minutes, cut your white pizza, and serve it in a pizza pan. I prefer to cut pizza on a large cutting board instead of in the aluminum pizza pan which can create cut marks in the soft metal.
If you live in the New York metro, you’ll have access to primarily Polly-O and to a lesser extent, Galbani, at almost all local supermarkets.
Between the moisture in the tomatoes and the wetness of the cheese, it’s too much and makes a watery pie. Trust me on that!

Creamy Garlic White Pizza Sauce Recipe
If you want to use Galbani instead, you’ll definitely need to paint a bit more water onto the bottom of your pizza dough before applying the cheese, as Galbani has less moisture than Polly-O.
In the white pizza videos on my YouTube channel, I used Galbani, and if you watch them carefully you can see the almost grainy texture in the pie.
With Polly-O, you’ll get the smooth white look you normally find at your local New York pizzeria. All but the one white pizza pictured directly above in this post use Polly-O mozzarella and ricotta.
White Pizza Recipe Without Ricotta
Now, most New York shops aren’t using Polly-O but instead are using Grande brand mozzarella and ricotta which are too hard to purchase for the home cook.
And please, don’t think I’m hating on Galbani. Their ricotta is far superior for cannoli filling and a host of other recipes.
