This chorizo mango pizza is a meat lover’s dream! I had a very similar pizza at a local restaurant in Pittsburgh and it was SO GOOD, I knew I had to recreate it at home.

I've been seeing mangos pop up at the grocery store, which reminded me of my mango crumb bars and also this mango chicken salad. It also reminded me of this pizza recipe that I originally created in 2017, but I decided it needed a facelift. Spoiler: the recipe is exactly the same (and just as good) as it was back then.

The base of the pizza is made of…CHORIZO, meaning the chorizo takes the place of some sort of marinara sauce. On top of the chorizo is mango, poblano pepper, red onion, goat cheese, and burrata. It's a salty-sweet pizza situation that you're going to want to try for yourself.
Step 1: Roll out the dough. First, flour a work surface then roll the dough out to be the size of a large baking sheet. Then, transfer the dough to your greased or parchment-lined baking sheet.
Step 2: Cook the chorizo. Add chorizo and a bit of olive oil to a medium skillet and cook it over medium heat for 8-10 minutes until it's nice and crispy. Use a slotted spoon to remove it and place the cooked chorizo onto the pizza dough.

Step 4: Bake. Bake the pizza at 450° for 10 minutes, then remove it and add the burrata and goat cheese. Place the pizza back into the oven an d bake it for 3-4 more minutes until the pizza crust is golden brown and the cheese has melted.

Honestly? Whatever kind is in season. I used an ataulfo mango and it worked great -- perfectly sweet to balance out the saltiness of the chorizo.

*Chorizo options: I used pre-packaged chorizo in the casing and simply diced it and cooked it. You could also use chorizo from behind the meat counter and remove the casing and cook it like ground chorizo (or sausage). Or, to make this recipe vegetarian, simply substitute your favorite plant-based meat.

Place the pizza stone in the oven on a rack at the bottom of the oven and turn on the oven, 250 degrees C and convention oven. If you do not have a pizza stone, then turn up at 230 degrees C and convention and use 2 baking sheets instead.
Chop the onion and garlic. Fry in the pan for some olive oil. Then add the skinned tomatoes, sugar, chili, salt, oregano and cayenne pepper. Simmer for 10-15 minutes. Then add the 4 tablespoons of flour, stir quickly around with a whisk. Once you’ve done that, you have a delicious, thick and rustic sauce.
Mix flour, salt and baking powder together. Add in the oil and water. When it is a delicious and elastic dough, you take it out on the table with a little flour and cut the dough into 4 pieces. Knead each piece. Roll them flat. Put some flour on your pizza spade and put one of the rolled pieces on. Put on the sauce, cheese and chorizo. Put it on the stone for about 6-10 minutes – until golden. Take the pizza out and let it cool. Make the pizzas one by one. When all is finished you add on the feta cheese and sprinkle a little oregano on them. Ready to serve!

Bland mel, salt og bagepulver sammen. Kom så olie og vand i. Når det er en lækker og elastisk dej, tager du den ud på bordet med lidt mel og fordeler dejen i 4 stykker. Ælt hvert stykke. Rul dem så ud. Kom noget mel på din pizzaspade og kom en af de udrullede stykker på. Kom så sauce, ost og chorizo. Kom ind på stenen i cirka 6-10 minutter – til gylden. Tag så pizzaen ud og lad den køle. Lav pizzaerne én efter en. Når de alle er færdige kommer du fetaen på og drysser lidt oregano udover. Klar til servering!
