White Zucchini Pizza Recipe

Pizza with zucchini is one of our favorite summer pizza recipes! Its crispy crust and shaved parmesan pair beautifully with fresh, marinated zucchini. Plus, it’s super easy to make from scratch with this easy no-knead pizza dough!

Good news? You don’t need to cook zucchini, but I’ll show you how to save time and add plenty of zucchini to your pizza, not just a few slices

You know I like to keep things simple, so I came up with MARINATED ZUCCHINI: easy and super quick to make without requiring fancy ingredients!

White Pizza With Zucchini And Pine Nuts

If you let marinate finely sliced zucchini in some olive oil, Italian herb seasoning and lemon zest, you can easily turn them into a fresh, delicious topping in no time. The marinade adds flavor to zucchini, making a lovely match for creamy mozzarella, sliced garlic and savory parmesan cheese.

FLOUR:all-purpose flour is great for this recipe. Go for good-quality unbleached flour if possible and be sure to measure the flour correctly

YEAST: I used instant yeast, it’s very convenient since you add it directly into the flour. But you can use Active dry yeast instead, it works fine, but it must bereactivated in warm water before adding to the dry ingredients (follow the manufacturer’s directions).

White Zucchini And Ricotta Pizza Recipe

ZUCCHINI: I used two large zucchini for this recipe, at least 18oz/500 grams. You want to finely slice them, possibily with the help of a mandoline

HERBS & SPICES: I used Italian herb seasoning for convenience and flavor, plus a pinch of chili flakes and freshly ground black pepper, definitely pantry staples for many. But you can use chopped fresh herbs like basil or parsley, and skip the chili flakes if you wish.

LEMON: the lemon zest adds delicate, fresh notes and goes very well with parmesan and the spicy topping. But it’s subtle, you can taste it here and there. Use more zest if you want the lemon flavor pops.

Zucchini And Prosciutto Pizza

CHEESE:fresh, creamy mozzarella is best, it melts over the zucchini nicely, while savory shaved parmesan cheese adds a gourmet twist. Feel free to skip the parmesan cheese if you prefer a vegetarian pizza recipe, or swap mozzarella and parmesan for crumbled feta or ricotta cheese if you wish.

EXTRA VIRGIN OLIVE OIL: finish with a drizzle of extra virgin oil for more flavor, definitely a must for every Italian pizza lover.

The recipe usesthis high hydration doughwhich means thatthe amount of water is over 80%of the amount of flour. It’s a bit sticky, but easy to whip up in 1 bowl and makes a delicious crispy crust.

Zucchini And Ricotta Pizza

This pizza with zucchini has a crispy crust topped with creamy mozzarella, marinated zucchini and parmesan shaves. The dough is super easy to make from scratch and doesn't require any kneading.

YEAST: Active dry yeast and instant yeast can be used interchangeably in this recipe. However, keep in mind that Active dry yeast needs to be activated in water and let it sit until slightly foamy before adding to the flour (follow the manufacturer’s instructions). Also, you might need to extend the proofing time if needed.

HOW TO MEASURE FLOUR: I use both US cups and grams. The cups of flour are leveled: fill the measuring cup all the way to the top letting the flour flow over a little. Then, use the back of a knife to level the top off. However, a digital scale is an excellent kitchen tool and gives a more correct weight. 

Zucchini Pizza Boats

FLOUR: all-purpose flour is perfect for pizza, but you can use bread flourinstead,  it’s totally fine. Whole-wheat flour instead, although healthier than white flour,   makes a dense, less crusty pizza. If you wish to use it, I would advice using no more than a 1/3 of the flour. Also, keep in mind it might change the water absorption.

WATER ABSORPTION: water absorption is the amount of water taken up by flour and may vary significantly depending on the type of flour, brand, and weather conditions. When you add water to the flour, start with the amount stated in the recipe. If the liquid is not enough to achieve the dough consistency, just add gradually a little extra water (1 or 2 Tbsp) until the flour is incorporated.

WHAT TO USE INSTEAD OF A PIZZA STONE? Each oven usually has a rimmed baking sheet that you can simply invert it and place on the lowest shelf of your oven before you preheat the oven. Then place your pizza and parchment paper on a pizza peel or on a large tray and, when the oven is hot and it’s time to bake,  slide the pizza onto the hot reverted baking sheet.  This way, taking the pizza in and out of the oven will be easier than if the baking sheet was right-side up, and at the same time the preheated baking sheet will make a crisp pizza crust. 

Roasted Zucchini And Potato White Pizza With Gorgonzola And Mixed Herbs

HOW LONG DOES PIZZA WITH ZUCCHINI PIZZA LAST? Once pizza is cold, place it in a large freezer bag and refrigerate for up to 2 days in the fridge. Alternately, wrap your pizza in cling film or place it in a freezer bag, make sure you squeeze the air out and freeze it up to 2 months. Defrost at room temperature. Toast your leftover pizza in the oven, enjoy.

WHAT TO SERVE WITH PIZZA WITH ZUCCHINI? It’s a good idea to whip up light and healthy sides to go with pizza. You might try this spicy chickpea salad to this cannellini bean salads if you want to add plant-based protein to the meal. Or you can make a quick tomato and onion salad or a tomato and cucumber salad, for a lighter side packed with vitamins and flavor.
