When I was in Middle School, I remembered the delicious slice of breakfast pizza that the cafeteria women served! Breakfast was one of the meals of the day that I seemed to favor. Maybe because my mom isn’t American, so scrambled eggs and breakfast pizza weren’t typical breakfast dishes.

Well, many years later I remembered the School Breakfast Pizza again. I wanted to recreate a morning pizza with toppings along the lines of how I remembered it being back in school. So sausage, eggs, and cheese were on the essential list of ingredients.
Over time, I so, slightly recall a white pizza sauce on the school breakfast pizza rather than a red-based tomato sauce which is what lead me to use homemade sausage gravy (which by the freezes amazingly for times when you need to whip up a pizza sauce!)
Using sausage gravy is an all-inclusive sauce! Since chunks of pork sausage are already in this sausage gravy it’s only brilliant to use it as a pizza sauce, (pork sausage + a roux = yummy white sauce!)
Sheet Pan Breakfast Pizza Recipe (school Breakfast Copycat)
If you didn’t know sausage gravy freezes well, your in for a real surprise! It’s the only way I make sausage now! I like to double my sausage gravy, cool it then pack into sandwich bags into 2 cup portions for a shortcut to biscuits and gravy or when I need some sauce for breakfast pizza! It’s a huge time saver! Then when I need some gravy I’ll peel off the freezer bag and pop the frozen block right into the pot and heat it up while the biscuits bake. You can simply pop the frozen gravy into the microwave for a quick defrost too or thaw the night before.
The sausage gravy makes a real creamy sauce over a homemade pizza crustand toppings like cheese and eggs are the basics of creating a pizza for breakfast. Any additional toppings like bacon, peppers, or other veggies can easily be included.
Apparently, a Midwestern convenience store called Casey’ssells these kinds of pizza pies on their breakfast menu! They have 3 breakfast pizzas to choose from which are Sausage Breakfast Pizza, BaconBreakfast Pizza, and Veggie Breakfast Pizza. Each pizza has a choice of a cheese sauce or sausage gravy as the sauce. So, I’m not the only one who uses sausage gravy for pizza!
School Cafeteria Pizza
I usually make pizza dough the night before for pizza entrees throughout the week, so, one batch of pizza dough for me makes 4 pizzas. When morning comes I typically assemble the pizza using thawed sausage gravy, freshly grated Monterey Jack Colby Cheese, and freshly made scrambled eggs.
As a result, if you do not activate your pizza dough (meaning you used cool tap water when making your dough) you can assemble your pizza cold onto a pan if your fridge allows the space. Since the toppings are not too wet and the dough should barely rise if making from the cold dough, you can assemble the pizza the night before. Be sure to cover well overnight. In the morning, brush the pizza crust with oil and pop into a pre-heated 450°F oven for 15-20 minutes.
This is the pizza dough as seen in the photo. Stir the first 5 ingredients then add the flour and knead for 7 min. Makes 1 ball of dough. Cover and refrigerate. To use right away use warm water to activate the yeast. The dough will start to immediately rise if activated with warm water.
Mexican Breakfast Pizza
Yes! Store tube Crescents can be used, but my Pillsbury Copycat recipe forHomemade Crescent dough is super easy and quick to make. However, pizza dough has got to be my first choice as the base to this pizza.
Although mozzarella cheese wins first place over any pizza crust, breakfast on the other hand goes with cheeses like cheddar or Colby. I used Monterey Jack Cheese.

I originally took shortcuts to make this breakfast entree and used uncooked eggs (meaning I just whisked the eggs and milk together then poured over the pizza.) Although that’s a great way to avoid the need to wash a skillet, it won’t make up for the fluffiness of real scrambled eggs you’d get from cooking over the skillet.

As a result, I only recommend scrambling the eggs for the pizza topping. I love it so much that I really take the extra step of using a non-stick skillet in addition to making the pizza early in the morning. You can thank me later, it makes a huge difference!

Since sausage gravy is made from a roux it reheats well. Making sausage gravy ahead of time can be a real time saver for those mornings when you have a house full of guests and don’t want to make things from scratch! Which is why freezing gravy is amazing, too!
School Breakfast Pizza (4 Ingredient)
To make ahead:place the pot of cooled gravy straight into the refrigerator, if space allows. When ready to serve simply place on the stove and reheat over medium heat. Sometimes additional milk may be needed to revive the gravy.
My ultimate favorite way to handle leftovers is to freeze it! It’s impressive how well it freezes and how handy such a technique can be for those mornings you don’t feel like making everything from scratch! Try it to believe it!
To Freeze Gravy: Cool the sausage gravy completely. Then pour into a freezer ziplock bag or sandwich bag. Freeze laying flat (to save room for storage later.) Freeze for up to 3 months.

To reheat gravy: Sausage gravy reheats well. Reheating it in the microwave or over the stovetop does the job nicely. Sometimes you may need an extra splash of milk to revive the gravy again.
Making a Breakfast Pizza is easy, especially if you freeze sausage gravy. Sausage gravy works as the pizza sauce in breakfast pizza and the toppings are very few.
