Mushroom Mozzarella Pizza Recipe

I’ve been wanting to include a pizza recipe made from scratch on my blog for a long time. Why? Because I can eat pizza everyday!

I’ve been going back and forth on whether I should include a pizza recipe because it breaks a few of the rules that I have on the site – 30 minutes or less and fewer than 10 ingredients (mostly that is).

Admittedly, I have been breaking these rules as of late, but one thing is true: all the recipes are easy and instructions are straight-forward, so prepping the ingredients is pretty quick (at most 30 minutes), and the majority of the total time is waiting for the food to bake, cook, or roast.

Think of all the pizza that you can make or all the pizza topping possibilities. Also think about simply serving the sautéed mushrooms and leeks as a great vegan side dish. The balsamic reduction is also amazing on salads, appetizers, meats, and even on desserts!

Bake for 15-20 minutes (turning the sheet around once) until the crust is cooked through and the cheese is melted. No pizza stone or pizza pan required!

After the pizza is ready, top the hot pizza with more salt and pepper, fresh basil, dried oregano and red pepper flakes if you like! Drizzle with as much balsamic reduction as you want.

Supreme Vegetarian Pizza (so Easy!)

When I originally published an article about this recipe in the summer of 2015, the title—Like Mushroom Pizza? We're Gonna Take You to Funghitown—shamelessly cribbed a pun from the menu of Margot's Pizza, a now-shuttered pizzeria pop-up founded by former Serious Eats editorAdam Kuban. Why plagiarize? Partly because I don't feel bad about it (I suggested he call his mushroom pie the Funghitown in the first place), and partly because it also gives me the opportunity to blab about how awesome Margot's was (R.I.P.). It was awesome. I wish you all could go.

 awesome? The mushroom pizza I tried to eat growing up. I'm talking about the stuff from the NY slice shops, where you'd get a few pieces of canned or fresh mushroom on top of a slice of reheated pizza that barely saw enough time in the oven to take the mushrooms beyond the slimy-but-edible stage. I hated mushroom pizza as a kid, and I'm sure I'm not alone.

But that was then, and things have changed. I've been taken on a one-way trip to Funghitown, and now that I'm here, I can only look at my past self in pity and hope that I never become that person again.

Recipe: A Gourmet Mushroom Pizza

Layering on straight mushrooms is all well and good, and I like the just-singed-by-the-flame mushroom flavor that fresh mushrooms will get you, but if you 

 want to get funghi with it, I suggest using a combination of fresh and cooked mushrooms to get both that fresh sweet flavor and the richer umami notes.

Sautéed mushrooms work, but a duxelles—a rough, seasoned purée of cooked mushrooms that's part of the classic French canon—works even better. I start by pulsing a mixture of button, shiitake, and portobello mushrooms in the food processor until they're finely minced, then I sauté them in olive oil until browned.

Once they're ready, I hit them with some shallots and thyme for flavor, along with a big slug of brandy to moisten them up and bring some class to the affair.

The duxelles acts essentially as a sauce for the pizza, so extra tomato sauce would be superfluous, not to mention a distraction from the mushroom flavor. I dollop the duxelles onto my stretchedNeapolitan-style pizza dough, scatter it with drained fresh mozzarella, cover the whole thing with a blanket of sliced mushrooms and more fresh thyme and garlic, drizzle it with olive oil, sprinkle it with salt, then park it in a preheated pizza oven. The reason for my haste is this: This pizza is good. But like, really good. Like, really really good. Like, really really really real — it’s just good, OK? And you need to get it into your life as soon as is appropriate for your schedule (which I’m hoping is maybe, definitely, today).

First, if you’ve never had a grilled pizza, what are you doing with your life? I kid, I kid. But honestly, grilled pizza is where it’s at. In the summer, there is no other way. It’s just like making a homemade pizza, but instead of turning on the oven and sweating to death in your kitchen, you can throw it on the grill and not only does it cook much faster, but you get this extra smoky flavor and char from the grill that is imparted into the soft, chewy dough and it. is. just. incredible. I paired that whole situation with a truffle oil/baby bella/fresh rosemary/smoked mozzarella situation so when I told you to get this pizza into your life ASAP? All of that is why.

The dough itself is probably the easiest part of the recipe, and it’s also my favorite part (if I had to choose). I use Red Star’s quick rise yeast along with a little flour, salt, water and olive oil. That’s it! The result is this super soft, chewy and tender dough that lends itself well to the grill. It’s easy to handle and doesn’t toughen up once it hits the heat, but it also holds up many toppings. And I love my toppings, so I load them up.

In having grilled a few pizzas in my day, I’ve learned that the best technique is to preheat all the burners of your grill to high heat. Then, after about 10-15 minutes, turn off one side of the grill so you have a direct heat area and an indirect heat area. You’ll start by cooking the pizza dough over direct heat to get that good char on the crust, but when you flip it and add the toppings, you’ll finish cooking it over indirect heat so it can cook through and the cheese can melt before anything starts to burn. It’s a quick process, but you get the hang of it quickly, too. So don’t panic and have fun! And remember, in the end you get a pizza prize.Please tell us you are a mushroom lover?
