I’ve always loved cauliflower pizza when I was craving pizza but wanted something healthy and diet-friendly! However, in the past I made the low carb cauliflower pizza crust with eggs and parmesan cheese. So now it’s highest time to share the vegan version that is at least as delicious – or even better!

In this recipe, I use flax meal as an egg replacer instead of real eggs. Also, I use almond flour for more protein and fiber and nutritional yeast flakes for a cheesy flavor instead of regular Parmesan. The almond flour also makes the crust crispier. In my original flour-less recipe, it was even softer.
Low Carb Gluten Free Cauliflower Pizza Crust

Start by processing the cauliflower florets in a food processor until you have cauliflower rice. However, be careful not to purée it! Then microwave it for a few minutes until tender. Alternatively, you can put it in a fine-meshed sieve. Then place this on a pot with some water in it, cover and steam it.

Simple Cauliflower Pizza Crust
After that let the steamed cauliflower rice cool. Then, place a clean tea cloth in a bowl, add the cauliflower rice into it, and squeeze out any excess liquid as best as you can.
Note: This is a very important step, otherwise the cauliflower pizza crust will not crisp up. You’ll be surprised at how much water actually comes out!
Next, put the dry cauliflower rice in a bowl. Then add flax meal, almond flour, nutritional yeast flakes, salt, pepper, garlic powder, and Italian seasonings and mix everything together to form a dough.

Tip: Instead of almond flour, you could also use chickpea flour. Furthermore, you could replace the flax meal with ground chia seeds or slightly less ground psyllium husk.
Now you can preheat the oven and line a baking sheet with parchment paper. Place the cauliflower pizza dough on the prepared sheet. Then put a piece of plastic wrap on it (so it won’t stick) and roll out the dough into a thin pizza.
Bake the pizza dough in the oven for about 20-25 minutes. Then flip it over, if possible, and bake for 5 minutes more. Don’t worry if you don’t succeed in flipping the pizza. The pizza crust will be a little less crispy but it will be still delicious!

Meanwhile, you can prepare the tomato sauce and toppings. I topped my cauliflower pizza with homemade tomato sauce, cherry tomatoes, mushrooms, onions, Kalamata olives and vegan mozzarella, but you can do it however you like.
After adding the toppings on your pizza, bake it for another 10 minutes. Then let it cool a bit, garnish with basil or other herbs or vegan parmesan. Slice and enjoy it!

Cauliflower Crust Breakfast Pizza (gluten Free)
We usually make fathead pizza dough. I won’t lie – it’s my preferred pizza crust. But, I know not everyone loves fathead dough like I do!
So, we’ve been working on perfecting other low carb pizza crusts, like our chicken crust pizza and now this cauliflower pizza recipe, made with a crust of riced cauliflower, cheese, eggs, and a bit of coconut flour.

We love that this crust is naturally gluten and grain free, made with a veggie (something we always want more of!), and it’s kid-friendly and sturdy enough that you can pick it up and eat it like pizza.

Cauliflower Crust – To prepare this low carb cauliflower crust recipe you’ll need a medium head of cauliflower, mozzarella and Parmesan cheeses, eggs, coconut flour, and garlic powder! You can keep things simple by starting with a bag of frozen riced cauliflower, if you prefer! Tips below.
Toppings – Feel free to get creative. We usually go with our favorite pizza sauce (Rao’s, of course), plenty of mozzarella, pepperoni, black olives, and basil.
We inevitably get asked if you can swap coconut flour for almond flour in recipes like this and, unfortunately, the answer is no, not without some additional changes.
Eggless Cauliflower Pizza Crust
Coconut flour really soaks up liquid and this recipe was formulated for coconut flour. If you’d like to try with almond flour, use 3x as much almond flour. I haven’t tested it myself though, so no guarantees.
You’ve got a few options for preparing this cauliflower crust pizza. I started with a fresh head of cauliflower and riced it in a food processor.
You can do the same or buy pre-riced cauliflower or florets from the store, fresh or frozen! I like fresh but frozen is pretty easy too. If using frozen riced cauliflower, proceed with the recipe as directed. If you’re using frozen florets, you’ll want to thaw them first and then chop them into rice-sized pieces.

Either way, you will need to squeeze as much liquid out of the cooked riced cauliflower as possible. Too much moisture and the cauliflower crust won’t crisp up!
I use this Breville food processor and it’s my FAVORITE kitchen appliance. I’ve gone through all the big brands of food processors, but this one is the best, in my opinion. It makes short work of grating cheese, making cauliflower rice, slicing veggies, and of course chopping up everything for these broccoli fritters.
Cauliflower: To prepare the cauliflower crust begin by adding the head of cauliflower to a food processor and processing it into small rice like pieces. You’ll then need to either steam, boil, or microwave it until the cauliflower rice is very tender. Let it cool for 20 minutes and then remove as much moisture as possible from the cauliflower. The easiest way is to use something like cheesecloth or a clean towel to squeeze all the liquid out of it!
Cauliflower Pizza Crust With Sausage And Basil Recipe
Mix: You can now add the cauliflower rice to a mixing bowl along with all of the other crust ingredients including the coconut flour, cheese, and egg. Stir all that up until it is well combined. You’ve just made an easy low carb cauliflower pizza dough!
Crust: When the cauliflower pizza dough is prepared you can line a pizza pan with parchment paper and start pressing the dough out into a circle, about 9 inches in diameter. You don’t want to spread it too thinly or the edges could burn and it may be too crispy. When ready, bake the cauliflower crust for about 20 minutes or until it has turned golden. Don’t overbake, you’ll add it back in to finish off the toppings!
Toppings: With the cauliflower crust baked it should now be able to hold up the toppings! Spread on the pizza sauce, add the cheese, and top it with your favorite stuff like pepperoni or black olives. Return it to the oven for about 5 to 10 minutes or until the cheese has melted and the toppings are ready. Let the cauliflower pizza cool
