Vegetarian Pizza Recipe Zucchini

This easy zucchini pizza recipe is the perfect vegetarian meal when you’re craving a slice. Fresh dough is topped with a savory red sauce, mozzarella cheese, and thin slices of zucchini. The pie is baked until the crust is crispy and cheese is hot and bubbly.

If you’re looking for a quick dinner idea that the whole family will enjoy, make a pizza! This is a tasty vegetarian option, letting the summer squash shine. The zucchini is thinly sliced, evenly placed around the dough, and then seasoned with Italian herbs and savory seasonings.

Herb Garden Zucchini Pizza Recipe

I use my super easy homemade pizza dough recipe to make the dish from scratch. It yields two pies that have irresistible crispiness, and only takes about an hour to prepare! Or if you are in a pinch for time, store-bought crusts can be used. Look for 1 pound of fresh dough or the 10 to 12-inch wide pre-baked rounds.

Baking the pizza on a large sheet pan yields a larger pie and gives you more flexibility on the size, shape, and thickness. However, for an extra crispy crust, you can bake the pizza in a large cast-iron skillet. You can also grill the pizza dough, flip over, then add the toppings and heat until the toppings are hot and bubbly.

To switch up this recipe, other ingredients can be used to pair with the zucchini. Slice up some yellow squash, red onions, or bell peppers for extra color and crunch. Add some mushrooms for a more savory taste. Sprinkle on some creamy feta, goat, or ricotta cheese. Add some pungency with marinated artichoke hearts or briny olives.

Last week, I wrote all about our beautiful, flourishing herb garden. Over the next 2 days, it poured down rain, our big basil plant got overwatered, and now it’s sort of falling over on itself. It’s a good thing we planted two! It’s also a good thing that we’re not farmers because we can barely keep a few deck plants alive 🙂

We went to the farmers market last to get produce from ACTUAL farmers on Saturday, and I brought home these cute mini zucchini and tiny pattypan squashes. It inspired me to make a big green zucchini pizza to go along with our surviving herbs from basil plant #2 and lots of fragrant fresh thyme.

Summer Vegetable Pizza The Little Epicurean

This zucchini pizza recipe isn’t complicated to make, but I prepared the squash two ways, which creates a unique mix of flavors and textures on this otherwise very simple pesto pizza. First, I roasted the pattypan squash in the oven on top of the crust and the cheese. Then I peeled the mini zucchini with a vegetable peeler and marinated the thin strips in a bit of olive oil, lemon juice, salt, pepper, and fresh thyme.

The raw marinated zucchini goes on top of the cooked pizza along with lots of fresh basil, fresh thyme, generous scoops of pesto, and a healthy drizzle of olive oil. It’s a fun one to make and assemble because it’s so green and pretty! It’s delicious too – serve it with extra pesto on the side for scooping!

Zucchini Pizza Bites

This summer zucchini pizza features zucchini two ways: roasted and raw! We love its range of textures and fresh flavor from summer herbs.

In a small food processor, combine the pepitas, garlic, salt, and pepper and pulse until combined. Add the lemon juice and basil and pulse again. With the blade running, drizzle in the olive oil.

Dessert. I don’t finish my day without it. And the fact that I would give it a hard-pass if a flavorless, lifeless crust was in the mix is pretty telling.

You roll it out, fill it with delicious things, quickly fold the edges over, and boom. Crostata. No crimping, styling, or lattice tops. Just perfect, flakey pie crust.

When I’m making a recipe that’s primarily made of flour, I like to choose the organic stuff when I can. Flour has gotten a bad rap these past few years, but you don’t need to go without your favorite baked goods; you just need to choose better flours to bake with! Raw Vegan Pizza With Zucchini Cheese

So you mix those ingredients together, let it sit in the fridge for a half hour, and you’re ready to go. Roll it out with a rolling pin, mason jar, bottle of wine, or any cylindrical-shaped object in your kitchen, and you’re good to go!

Choose your favorite sauce. I love keeping cans of whole, peeled tomatoes in my pantry that I can doctor up whenever I need it, but you can also used your favorite (jarred or homemade) marinara sauce! You just need a bit – about 1/3 cup – on top of your crust.

Prep your zucchini. I don’t know about you guys, but zucchini is one of my favorite summer veggies. Grilled zucchini? Hallelu. It’s simple, light, and the perfect use of seasonal produce IMO.

Delicious Zucchini Pizza Crust Recipe (low Carb!)

Baking it with the crust is because those things are like sponges. They’re full of water, so pre-cooking them prevents your final product from being soggy. A great, delicious solution!

Bake it for 40 minutes, top it with fresh herbs, red pepper flakes, and vegan parmesan cheese, and pizza night has never looked so good!

Vegan

The bottom crust bakes to a delightful crispiness while still remaining slightly chewy, and the outer crust is as flakey as your grandma’s apple pie crust.

*Italian seasoning is a blend of dried Italian spices. If you don’t have it or can’t find it, just use a mix of dried herbs like oregano, basil, rosemary, and/or thyme. Yum!
